π Ingredients:
π¨βπ³ Instructions:
1οΈβ£ Prep Millet
Rinse Kodo millet 2β3 times. Soak for 15β20 minutes for faster cooking.
2οΈβ£ Tempering
Heat oil/ghee in a pan. Add mustard seeds and let them splutter.
3οΈβ£ Add Dal & Aromatics
Toss in urad dal and chana dal; sautΓ© till golden. Add green chilies, ginger,
curry leaves, and onion. Cook until onion turns translucent.
4οΈβ£ Veggies
Add carrots and peas. SautΓ© for 2β3 minutes till slightly soft.
5οΈβ£ Toast Millet
Drain and add soaked millet. Stir for 1β2 minutes to toast.
6οΈβ£ Cook
Add water and salt. Bring to a boil. Lower heat, cover, and simmer for 12β15
minutes until millet is soft and water is absorbed.
7οΈβ£ Rest & Serve
Turn off heat. Rest for 5 minutes. Fluff with a fork.
8οΈβ£ Garnish
Top with fresh coriander and lemon juice before serving. πΏπ
