1/4 cup basmati rice (soaked for 30 mins) ๐
2 cups milk ๐ฅ
1/2 cup unsweetened Kesar mango pulp ๐ฅญ
1/4 cup sugar (adjust to taste) ๐ฌ
1/4 tsp cardamom powder (elaichi) ๐ฟ
A few strands of saffron soaked in warm milk (optional) ๐ธ
Chopped nuts for garnish (almonds, pistachios) ๐ฐ๐ฅ
Rose petals or silver leaf for garnish (optional) ๐นโจ
1๏ธโฃ Grind Rice:
Drain the soaked rice and grind into a coarse paste using 2โ3 tbsp water.
2๏ธโฃ Boil Milk:
In a heavy-bottomed pan, boil the milk. Lower the flame and add the rice paste while stirring continuously to avoid lumps.
3๏ธโฃ Cook the Phirni Base:
Let it cook on low heat for 10โ12 minutes until thick and creamy. Stir often to avoid burning.
4๏ธโฃ Sweeten It:
Add sugar and cardamom powder. Mix well until sugar dissolves.
5๏ธโฃ Add Mango Goodness:
Turn off the flame and let the mixture cool slightly. Then mix in the mango pulp and saffron milk.
6๏ธโฃ Chill & Serve:
Pour into earthen pots or bowls. Refrigerate for at least 1โ2 hours.
7๏ธโฃ Garnish & Enjoy:
Top with chopped nuts, rose petals, or silver leaf. Serve chilled! โ๏ธ๐ฅญ
