1οΈβ£ Cook Chickpeas: Boil the soaked chickpeas in a pressure cooker with salt and a tea bag (for deep color) until soft (about 4-5 whistles). Discard the tea bag.
2οΈβ£ SautΓ© Spices: Heat oil in a pan, add cumin seeds, bay leaf, cloves, black cardamom, and cinnamon. Let them crackle.
3οΈβ£ Cook Aromatics: Add chopped onions, sautΓ© until golden brown, then add ginger-garlic paste and green chilies.
4οΈβ£ Add Tomatoes & Spices: Stir in tomato puree, all dry spices (except chole masala), and cook until oil separates.
5οΈβ£ Simmer: Add boiled chickpeas along with some cooking water. Mix in chole masala, simmer for 10-15 minutes until thick and flavorful.

3οΈβ£ Drain & Serve: Place on a paper towel to remove excess oil.
