Ingredients:

For Chole (Chickpea Curry):

βœ… 1 cup dried chickpeas (soaked overnight)
βœ… 1 large onion (finely chopped)
βœ… 2 tomatoes (pureed)
βœ… 1 tablespoon ginger-garlic paste
βœ… 2 green chilies (slit)
βœ… 1 teaspoon cumin seeds
βœ… 1 teaspoon coriander powder
βœ… 1 teaspoon garam masala
βœ… 1 teaspoon turmeric powder
βœ… 1 teaspoon red chili powder
βœ… 1 tablespoon chole masala
βœ… 1 bay leaf
βœ… 2 cloves
βœ… 1 black cardamom
βœ… 1 small cinnamon stick
βœ… 1 tablespoon dried pomegranate powder (anardana) or amchur (dry mango powder)
βœ… 2 tablespoons oil or ghee
βœ… Salt to taste
βœ… Fresh coriander leaves for garnish

For Bhature (Fried Bread):

βœ… 2 cups all-purpose flour (maida)
βœ… ΒΌ cup semolina (sooji)
βœ… Β½ cup yogurt
βœ… Β½ teaspoon baking soda
βœ… Β½ teaspoon salt
βœ… 1 teaspoon sugar
βœ… Water (as needed to knead the dough)
βœ… Oil (for deep frying)


How to Make Amritsari Chole Bhature:

Step 1: Prepare Chole (Chickpea Curry)

1️⃣ Cook Chickpeas: Boil the soaked chickpeas in a pressure cooker with salt and a tea bag (for deep color) until soft (about 4-5 whistles). Discard the tea bag.
2️⃣ SautΓ© Spices: Heat oil in a pan, add cumin seeds, bay leaf, cloves, black cardamom, and cinnamon. Let them crackle.
3️⃣ Cook Aromatics: Add chopped onions, sautΓ© until golden brown, then add ginger-garlic paste and green chilies.
4️⃣ Add Tomatoes & Spices: Stir in tomato puree, all dry spices (except chole masala), and cook until oil separates.
5️⃣ Simmer: Add boiled chickpeas along with some cooking water. Mix in chole masala, simmer for 10-15 minutes until thick and flavorful.
6️⃣ Garnish: Finish with dried pomegranate powder or amchur and fresh coriander leaves.


Step 2: Make Bhature (Fluffy Fried Bread)

1️⃣ Prepare Dough: In a bowl, mix flour, semolina, baking soda, salt, sugar, and yogurt. Gradually add water to form a soft dough. Knead well and rest for 2 hours.
