π Pav Bhaji β Mumbai's Street Food Delight!
A spicy, buttery vegetable mash served with soft pav (bread rolls) toasted in butter β Pav Bhaji is an all-time favorite!
For the Bhaji (Vegetable Curry):
π§ 2 tbsp butter + extra for toasting pav
π½ 1 cup mixed vegetables (potatoes, cauliflower, carrots, peas), boiled and mashed
π§ 1 onion, finely chopped
π 2 tomatoes, finely chopped or pureed
πΆοΈ 1 green chili, chopped (optional)
π§ 1 tsp ginger-garlic paste
πΆοΈ 1Β½ tsp pav bhaji masala
πΆοΈ Β½ tsp red chili powder (adjust to taste)
π§ Salt to taste
π§ Β½ cup water (adjust for consistency)
π Lemon wedges and chopped coriander for garnish
For the Pav:
π₯ 4 pav buns
π§ Butter, as needed
πΏ Pav bhaji masala or chopped coriander for extra flavor (optional)
Heat butter in a pan. Add chopped onions and sautΓ© until translucent.
Add ginger-garlic paste and green chilies, cook until raw smell disappears.
Add tomatoes and cook till they become soft and mushy.
Add pav bhaji masala, red chili powder, and salt. Cook the masala till butter starts to separate.
Add boiled and mashed vegetables. Mix well and mash again using a masher directly in the pan.
Add water to adjust consistency. Let it simmer for 5-7 minutes on low heat.
Garnish with fresh coriander and a squeeze of lemon.
Slice pav buns horizontally.
Heat butter on a tawa (flat pan), sprinkle some pav bhaji masala or chopped coriander (optional).
Toast the pav till golden and crisp.
Serve the hot bhaji with toasted pav, lemon wedges, and chopped onions on the side.
Donβt forget a dollop of butter on top! π§
