1 cup basmati rice (washed & soaked for 20 mins)
2 tbsp oil or ghee
1 tsp cumin seeds
1 bay leaf
1 small cinnamon stick
2-3 cloves
1 small onion, sliced
1 tsp ginger-garlic paste
1 cup frozen mixed vegetables (peas, carrots, beans)
Salt to taste 🧂
2 cups water
Fresh coriander leaves for garnish 🌿
Heat oil/ghee in a pan. Add cumin seeds, bay leaf, cinnamon, and cloves. Let them sizzle.
Add sliced onions and sauté until golden brown.
Stir in ginger-garlic paste and cook for a minute.
Add the frozen vegetables and sauté for 2-3 minutes until slightly tender.
Mix in soaked rice and gently stir everything together.
Add 2 cups of water and salt. Cover and cook on medium-low heat until rice is fluffy and water is absorbed (about 15 minutes).
Let it sit for 5 minutes, then fluff with a fork.
Garnish with chopped coriander and serve hot with raita or pickle! 🥒🍋
