Mango Pulao / Biryani

🌿 A tropical twist on traditional pulao with the richness of mango and a hint of coconut!


🥭 A tropical twist on traditional pulao with the richness of mango and a hint of coconut! 🍛

Ingredients:

  • 🍚 1 cup basmati rice (soaked for 20 mins)

  • 🧅 1 medium onion, thinly sliced

  • 🫒 2 tbsp oil or ghee

  • 🥭 ½ cup unsweetened Kesar mango pulp

  • 🥥 ½ cup coconut milk (optional, for richness)

  • 🧄 1 tsp ginger-garlic paste

  • 🌶️ 1-2 green chilies (slit)

  • 🧂 Salt to taste

  • 🌿 ½ tsp garam masala or biryani masala

  • 🌾 Whole spices (1 bay leaf, 2 cloves, 2 green cardamoms, 1 small cinnamon stick)

  • 🥕 Optional veggies (peas, carrots, beans)

  • 💦 2 cups water

  • 🌿 Chopped coriander and mint for garnish


👩‍🍳 Instructions:

  1. 🔥 Heat oil/ghee in a deep pan or pressure cooker.

  2. 🌾 Add whole spices and sauté until fragrant.

  3. 🧅 Add sliced onions and sauté until golden brown.

  4. 🧄 Stir in ginger-garlic paste and green chilies. Cook for 1-2 minutes.

  5. 🥕 Add chopped veggies (if using) and sauté lightly.

  6. 🥭 Mix in the unsweetened mango pulp and stir well.

  7. 🥥 Pour in the coconut milk (optional) and cook for 2 minutes.

  8. 🍚 Add soaked rice, 2 cups water, salt, and garam masala. Mix gently.

  9. 🔄 Cover and cook until the rice is fluffy and water is absorbed (or pressure cook for 1 whistle).

  10. 🌿 Garnish with fresh coriander and mint. Let it rest for 5 minutes before serving.


🍽️ Serve with:

  • Raita 🥒

  • Papad or pickle 🥒🥗

  • Mango salad for extra zing! 🥭
